   Wiping cloth use and storage

   Observed a red sanitizer with wet wiping cloth with a concentration below the required 200 ppm (Quat). Cloths in-use for wiping counters and other equipment surfaces shall be stored in sanitizer of the appropriate concentration in-between uses and laundered daily. (C) Corrective Actions: Sanitizer bucket was emptied and remixed to a proper concentration.
