   Observed several TCS foods stored in a Prep-top cooler and RIC with internal temp higher than 41 F. (CA) Advised the PIC that TCS food needs to be stored at temps of 41 F or lower. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below Repeat Violation.
