   Observed several food containers stacked while still wet and not allowed to properly air dry before storage (in the kitchen and the shelves outside the kitchen). Improper drying and wet stacking can promote microbial growth and may recontaminate cleaned and sanitized food-contact surfaces.

   Inspection item: Utensils, equipment and linens: properly stored, dried, handled

   Observed several food containers stacked while still wet and not allowed to properly air dry before storage (in the kitchen and the shelves outside the kitchen). Improper drying and wet stacking can promote microbial growth and may recontaminate cleaned and sanitized food-contact surfaces. CA: PIC will ensure all cleaned and sanitized food-contact equipment and utensils are completely air dried before stacking or storing. PIC will rearrange containers and pans to allow adequate airflow during drying and will retrain kitchen staff on proper warewashing and air-drying procedures. 10) Protection of Clean Items. (a) Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils: 1. Shall be air-dried or used after adequate draining before contact with food; and 2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. Corrected On-Site. New Violation. Correct By: 09/24/2026
