   Observed no irreversible temperature registering device for measuring utensil surface temperature in high-temperature sanitizing dish machine. CA: 2. In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature. CORRECT BY: A device or test kit to measure the final rinse temperature of the high-temperature sanitizing dish machine must be provided and used. CORRECT BY: A test kit for measuring the concentration of sanitizer must be provided and used. Test kit should be checked to ensure that it has not expired on a regular basis.
