   Observed the Tall 2 Door Cooler (located on the serving line) with an ambient temperature of 48F. Only TCS foods in the cooler were salads that were prepared that morning (cooling).

   Observed the Tall 2 Door Cooler (located on the serving line) with an ambient temperature of 48F. Only TCS foods in the cooler were salads that were prepared that morning (cooling). CA: Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. Advised to put a work order in to have the cooler serviced and to not hold TCS foods in the cooler until it is holding at 41F or lower (ideally ~36F to 38F). PIC voluntarily discarded the salads.
