Code 511-6-1.04(1)
Observed during inspection, a patron approach food employee and PIC to show them green mold on a white cube of cheese. Observed the multiple swiss white cubes of cheese in big plastic containers with green mold on them in reach in cooler. The yellow cheddar cheese was fine. The swiss white cheese in the original packaging was fine and properly dated. CA: Food shall be safe, unadulterated, and honestly presented. COS: PIC discarded the two big plastic containers of white cheese and placed the containers at the 3-compartment sink to wash, rinse, and sanitize. Discussed with PIC multiple ways to prevent mold growths in food: that they can use clean containers to hold more cheese and to make sure that the cheese is not in the containers for more than 7 days after the original packaging is opened and placed inside of the plastic container. They can also check the the cheese in the original packaging before placing them in plastic containers. They can also order the cheese containers already prepared. Corrected On-Site.
